Hegi Soba
This local specialty features a flavor that can only be enjoyed here. Hegi Soba is eaten by grabbing a bundle of soba noodles with your chopsticks and dipping them in a rich, soy sauce-base dipping sauce. At the soba restaurants, you can enjoy the dish even more by adding tempura fried shrimp and vegetables for a tasty, crunchy complement to the noodles. At the end of the meal, you can ask for sobayu, the soup used to boil your noodles, which you can then pour into your remaining dipping sauce. Drinking this light-bodied, warm concoction is a good way to finish the meal and warm your body.
